Revealing a ruby\/purple hue as well as a stunning nose of black raspberry and cassis interwoven with notes of bacon fat, spring flowers, violets, and smoked game, this beauty hits the palate with medium to full-bodied richness, a seamless texture, and gorgeous overall balance. The tannins are polished, and it has wonderful sweetness of fruit as well as considerable elegance. His son, Jacques, continued his father’s efforts until 1978 and today, the torch is carried by Jacques’ sons, Jean-Pierre and François. Fino, Manzanilla and Amontillado age with their flor cap intact, while Oloroso receives a stronger dose of grape spirit, which prevents yeast development and exposes the wine to oxygen as it ages. (Palo Cortado is a bit of an outlier, with a toe in both maturation styles.) In the mouth, the wine silky, dark and statuesque. The tannins are very finely countersunk into the fruit; they are chalky and gently grippy and shape the fruit in the mouth. With very good length of flavor through the finish, this is built to last some time. Very smart.
