The higher elevation provides a cooler growing environment that helps preserve freshness and acidity, while the rocky limestone soils contribute to the wine's mineral character.\u003c\/p\u003e\n\u003cp\u003eThe grapes are harvested by hand and whole-cluster pressed, followed by 24–48 hours of natural settling. Fermentation takes place in barrel, with 40% new oak and the balance in one-year-old barrels, followed by 12 months of élevage.\u003c\/p\u003e\n\u003cp\u003eThe result is a Chardonnay with an appealing combination of richness and freshness, showing citrus and honeysuckle alongside buttery, lightly toasted notes from the barrel aging.
