Description
A traditional method sparkling wine from the traditional varietals of the Limoux region Chardonnay, Chenin Blanc, and Mauzac. The entire harvest is hand-picked. After direct pressing, the grapes undergo a first fermentation in steel vats under controlled temperature. After blending, the second fermentation, as in Champagen, takes place in capped bottles. The wine is aged for around 30 months on the lees before disgorgement.
Pale yellow colour with golden reflections and fine bubbles. The effervescence carries aromas of spring flowers, fresh apple, and pear. The palate is lively, harmonious and round.
