It is unlikely that even the most skilled wine professional can remove a cork cleanly from an aged bottle of wine with a traditional corkscrew. When confronted with the task of opening an aged bottle with the cork intact, the Ah-so is the go-to that has the highest probability of success. But success is not guaranteed.
The Durand raises the success rate of removing old corks cleanly to nearly 100%. The Durand is a combination of an ah-so and the "worm" of corkscrew. The worm provides a stable backbone through the length of the cork, keeping it from breaking and/or sliding deeper into the neck of the bottle. This is that extra something that guarantees the work of the Ah-so can be done with less concern for the things that could go wrong during the extraction of an old cork.
I have consulted with a number of sommeliers that have opened many bottles of long-cellared wine. They were like, "Oh yeah, a Durand. They're fantastic!" Apparently, there were plenty in the know far before I made this discovery.
