The Fidora Monte Tabor Valpolicella Superiore Ripasso 2016 is an organic, biodynamic wine with notes of concentrated red and black cherry, plum, leather, and a hint of spice and chocolate, resulting from its Ripasso method. The Ripasso process involves a secondary fermentation with the lees of Amarone, adding complexity, body, and a velvety, dry, and harmonious mouthfeel.
