Daniel-Etienne Defaix is a historic family winery in Chablis, France, known for its unique winemaking process that includes long aging times, avoidance of oak, and extended lees contact. The 28-hectare estate focuses exclusively on Chardonnay and produces several cuvées, including Chablis Vieilles Vignes, and Premier Cru and Grand Cru appellations like Les LysVaillon, and Blanchot. The winery also produces a rare Bourgogne Rouge from old Pinot Noir vines. 

The 2013 Daniel Etienne Defaix Chablis Premier Cru "Vaillon" is a mature, complex white wine that has been aged for years before release. It displays a balance of ripe citrus, stone fruits, and honey notes from the extended aging, with a rich, creamy texture and vibrant, flinty acidity from its Kimmeridgian limestone soil.
