Daniel-Etienne Defaix is a historic family winery in Chablis, France, known for its unique winemaking process that includes long aging times, avoidance of oak, and extended lees contact. The 28-hectare estate focuses exclusively on Chardonnay and produces several cuvées, including Chablis Vieilles Vignes, and Premier Cru and Grand Cru appellations like Les Lys, Vaillon, and Blanchot. The 2013 Daniel Etienne Defaix Chablis Premier Cru "Vaillon" is a mature, complex white wine that has been aged for years before release.
