Eight miles south of Epernay in the Cote de Blancs Demier-Ansiot sustainably farms 1.5 ha of Grand Cru Chardonnay in the Cru of Oger. Nicolas Demiere is uncompromising. He eschews malolactic fermentation so even with 3 grams of dosage, this Brut tastes very pure. The size of the estate allows for the utmost care. the vines go back to 1947 and were planted to a great selection that Nicolas’ grandfather obtained from Henriot. Apart from the quality of the fruit, the signature of the estate stems fro Nicolas making his dosage with traditional liqueur made from sugar and still wine aged for up to two decades. If a particular vintage is not up to his standards, he will sell it off entirely to a négociant. His wines are incisive, precise, compelling and racy.
