Description
The 2023 Domaine Jean-Marc & Hugues Pavelot Savigny-lès-Beaune Blanc is a white Burgundy from the Côte de Beaune produced by the renowned Domaine Jean-Marc & Hugues Pavelot. Mostly Chardonnay with a small addition of Pinot Blanc (approx. 95% / 5%). Directly pressed with ambient yeast fermentation. Aged for about 10 to 12 months in oak barrels, using roughly 20% to 25% new oak.
Bright golden reflections in the glass with a fragrant, broad nose of citrus (grapefruit, lemon), pear and peach, white flowers, dried fruit/hazelnut, and a distinct mineral backbone. Rich, round, full-bodied, and smooth, balanced by a lively, harmonious acidic vein and a clean, lingering mineral finish. Pairs well with poultry, grilled prawns, and cheese soufflé.
John Gilman (View From the Cellar) 92 points "The gorgeous nose hops from the glass in a blaze of pear, apple, fresh almond, orange zest, chalky minerality and vanillin oak. On the palate the wine is deep, full-bodied and shows off excellent mineral drive."
