The Gusto Collection from Acetaia del Casato Bertoni represents a modern expression of the centuries-old tradition of Modena. Crafted from concentrated grape must and fine wine vinegar, these gourmet condiments are designed to enhance food rather than overpower it. Their naturally rich sweetness, balanced acidity, and remarkable density make them true finishing condiments—intended to be added just before serving. A few drops will add depth, freshness, and complexity.

Gusto Rosè 15 - A customer favorite!! is produced from concentrated grape must and white wine vinegar.  It is matured in carefully selected barriques that enhance its delicate red-fruit aromas. The result is an elegant, naturally fruit-forward condiment with exceptional versatility, pairing beautifully with salads, aged cheeses, tartare, omelets, fresh fruit, cocktails, spoon desserts - and most definitely Strawberries!

Gusto Raspberry this dark dense delicacy captures the bright character of ripe raspberries that have been reduced and concentrated.  The essence of raspberry is balanced with the distinct character of the grape must and wine vinegar that defines the collection. The fruit notes accentuate rather than mask the natural sweetness and acidity of the base, making it an excellent finishing condiment for chèvre, Parmigiano Reggiano, duck, dark chocolate, cheesecake, panna cotta, fresh berries and would make a delicious addition to plain yogurt (I recommend Fage. It is the silkiest, smooth yogurt on the market.) 

Gusto Passion Fruit An exotic, almost floral nose offers vibrant tropical aromas reminiscent of frangipani and unmistakable passion fruit layered over the naturally sweet-and-tangy profile of concentrated grape must. Its lively acidity and exotic fruit character make it a refreshing complement to grilled summer dishes, seafood, shrimp, tropical fruit, yogurt, panna cotta, citrus desserts, and sparkling wine cocktails. I haven't tried it, but on first taste, this would be great in a dry (Brut) Prosecco. 

La Bontà del Casato Riserva 15 is the Bertoni family's signature reserve condiment and one of the estate's most treasured creations. Made from only cooked grape must and wine vinegar, it develops a velvety texture and remarkable concentration through maturation in fine wooden barrels. With naturally occurring notes of ripe fruit, it is an exceptional finishing condiment for foie gras, aged cheeses, mushrooms, smoked salmon, seafood, caviar, and dark chocolate.

Throughout the collection, the emphasis remains on the quality of the grape must and the careful maturation process rather than artificial sweetness or heavy syrups. The result is a family of naturally expressive condiments that bring balance, elegance, and authentic Italian craftsmanship to both everyday meals and refined cuisine.
