This smoking spumante from Lazio was a wine that surprised everyone.  Made from 100% Bombino Bianco using the Martinotti Method (Tank Method), this wine is definitely NOT a Prosecco. 

Floral aromas and soft citrus notes lead as the soft texture of the mousse glides across the palate.  Clean and refreshing with pleasant mineral and toasty notes persisting on the finish.  Not a Prosecco and not quite a traditional method wine.  The Enfasi sits in the Goldilocks position being "Just Right" to turn an impromptu aperitivo into a celebration.
